Instructions
In a large mixing bowl, add the boiled chickpeas and diced potatoes. Gently toss to combine, taking care not to break the potatoes.
Add the finely chopped onions and tomatoes, mixing lightly until evenly distributed throughout the mixture.
Spoon the yogurt over the chaat, followed by drizzling the tamarind chutney and green chutney to create a balance of creamy, sweet, tangy, and herbal flavors.
Sprinkle in the roasted cumin powder, red chili powder, chaat masala, and salt to taste.
Mix gently until all the ingredients are well coated. Taste and adjust seasoning or chutneys as needed.
Just before serving, generously sprinkle the sev on top to preserve its crunch.
Garnish with fresh coriander leaves and serve immediately with lemon wedges on the side for a bright, fresh finish.
