Oven-Roasted Char Siu (Chinese BBQ Pork)

Instructions
In a medium bowl, whisk together the honey, soy sauce, hoisin sauce, rice wine, sugar, five-spice powder, garlic, and optional red food coloring until the sugar is completely dissolved and the marinade is smooth and glossy.
Place the meat in a large resealable bag or a shallow dish. Pour the marinade over the meat, turning to coat all sides evenly.
Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to fully penetrate the meat.
Preheat the oven to 375°F (190°C). Line a baking tray with foil and set a wire rack on top to promote even roasting and caramelization.
Remove the meat from the marinade and place it on the rack. Reserve the remaining marinade for basting.
Roast for 30–40 minutes, turning and basting the meat every 10 minutes, until cooked through and deeply caramelized.
Remove from the oven and let the meat rest for 10 minutes so the juices redistribute.
Slice thinly against the grain and serve with steamed rice, noodles, or soft bao-style buns.
